Vanilla Raisin Loaf Cake

Here’s a delicious Vanilla Raisin Loaf Cake recipe — moist, tender, and perfect with a cup of tea or coffee. The natural sweetness of raisins pairs beautifully with the warm flavor of vanilla.


Vanilla Raisin Loaf Cake

Ingredients:

  • 1 ½ cups (190g) all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup (1 stick or 113g) unsalted butter, softened
  • ¾ cup (150g) granulated sugar
  • 2 large eggs
  • 1 tsp pure vanilla extract
  • ½ cup (120ml) milk (whole or 2%)
  • 1 cup (150g) raisins
  • Optional: ½ tsp ground cinnamon (for a warm hint of spice)

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper for easy removal.
  2. Prepare the raisins: Place raisins in a small bowl and cover with warm water. Let them soak for about 10 minutes to plump up, then drain and pat dry.
  3. Dry ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon (if using). Set aside.
  4. Cream butter and sugar: In a large mixing bowl, beat the butter and sugar together until light and fluffy (about 2–3 minutes).
  5. Add eggs and vanilla: Beat in the eggs, one at a time, then add the vanilla extract.
  6. Combine wet and dry ingredients: Alternately add the dry ingredients and milk to the butter mixture, starting and ending with the dry ingredients. Mix until just combined—do not overmix.
  7. Fold in raisins: Gently fold the raisins into the batter.
  8. Bake: Pour the batter into the prepared loaf pan and smooth the top. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Cool: Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Tips:

  • For extra flavor, soak the raisins in vanilla extract or a splash of rum before adding.
  • A dusting of powdered sugar or a vanilla glaze makes a nice finishing touch.
