Chicken Adobo is a classic Filipino dish that’s both savory and tangy, known for its simple ingredients and rich flavor. Here’s a traditional and easy recipe you can try:
Chicken Adobo Recipe
Ingredients:
- 2 lbs (900g) chicken (bone-in, preferably thighs or drumsticks)
- 1/2 cup soy sauce
- 1/2 cup vinegar (white or cane vinegar)
- 6 cloves garlic, crushed
- 1 onion, sliced (optional)
- 2–3 bay leaves
- 1 tsp whole black peppercorns
- 1 tbsp brown sugar (optional, for a slightly sweet touch)
- 1 cup water
- 2 tbsp cooking oil
Instructions:
- Marinate the chicken:
In a bowl or zip-lock bag, combine chicken, soy sauce, garlic, and bay leaves. Marinate for at least 30 minutes, preferably 1–3 hours or overnight in the fridge. - Sear the chicken:
Heat oil in a large pan over medium heat. Remove chicken from the marinade (reserve the marinade), and brown the chicken pieces for a few minutes on each side. - Simmer:
Add the marinade back to the pan along with vinegar, water, peppercorns, onion (if using), and sugar (if using). Do not stir after adding vinegar—let it boil first to cook off the acidity. - Cook covered:
Lower heat, cover, and simmer for about 30–40 minutes or until chicken is tender. - Reduce the sauce:
Uncover and simmer for another 10–15 minutes until the sauce thickens slightly. Stir occasionally. - Serve:
Best enjoyed with steamed white rice. Optionally, garnish with chopped green onions or a boiled egg.
