Vanilla Raisin Loaf Cake
Ingredients:
- 1 ½ cups (190g) all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup (1 stick or 113g) unsalted butter, softened
- ¾ cup (150g) granulated sugar
- 2 large eggs
- 1 tsp pure vanilla extract
- ½ cup (120ml) milk (whole or 2%)
- 1 cup (150g) raisins
- Optional: ½ tsp ground cinnamon (for a warm hint of spice)
Instructions:
- Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper for easy removal.
- Prepare the raisins: Place raisins in a small bowl and cover with warm water. Let them soak for about 10 minutes to plump up, then drain and pat dry.
- Dry ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon (if using). Set aside.
- Cream butter and sugar: In a large mixing bowl, beat the butter and sugar together until light and fluffy (about 2–3 minutes).
- Add eggs and vanilla: Beat in the eggs, one at a time, then add the vanilla extract.
- Combine wet and dry ingredients: Alternately add the dry ingredients and milk to the butter mixture, starting and ending with the dry ingredients. Mix until just combined—do not overmix.
